                                        Aloo Matar

Aloo Matar is an easy to make, flavorful and vegan Indian dish.


Ingredients:  (Organic ingredients are preferred, if possible)

2 tbs. coconut oil, or extra virgin olive oil

1 large onion, chopped into small pieces

2 lbs. potatoes, chopped

Notes: 2 pounds are about 3 large potatoes | I prefer to cut them into small pieces, it takes less time to cook | Peeling is optional, I like them with the skin on.

1/2 can of tomato paste (these come in small 6 oz. size)

1 1/2 cups of frozen peas

3 cloves of garlic

1 inch piece of fresh ginger, grated

1 1/2 tsp. garam masala

1 1/2 tsp. paprika

1 bay leaf

Himalayan salt to taste (1 tsp. does it for me)

Directions:

Heat oil in a medium sized (at least 4 Quart) saucer pan. Add onions and potatoes, cook them for 10 minutes over low/medium heat, stirring a few times.

Add garlic, ginger, tomato paste, paprika, garam masala, bay leaf and salt. Stir thoroughly and continue cooking for 20 minutes.

Add the frozen peas. At this point, the potatoes may need anywhere between 5-15 minutes longer to cook completely. Sink a knife into one of the pieces, it needs to go through easily, if they are ready.

Frying potatoes takes longer than cooking them in water, but the flavor and the nutrients are preserved much more.
